A rich and creamy Cheesy Broccoli Cheddar Chickpea Skillet that’s nourishing, comforting, and comes together in under 30 minutes.

Ingredients

  • 10 oz. broccoli, cut into 1” florets
  • 1 1/4 tsp. kosher salt, divided
  • 1 Tbsp. plus 1/2 cup water, divided
  • 5 Tbsp. unsalted butter, divided
  • 10 Ritz crackers
  • 1/2 yellow onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 2 Tbsp. all-purpose flour
  • 1 cup whole milk
  • 2 (14.5-oz.) cans chickpeas, drained and rinsed
  • 1/8 tsp. baking soda
  • 4 oz. cheddar, shredded

Instructions

  1. Season broccoli with 1/4 tsp. salt. Pour 1 Tbsp. water over broccoli, cover, and microwave for 1 minute. Stir and continue microwaving in 30-second intervals until broccoli is fork-tender. Uncover and set aside.
  2. In a large skillet over medium heat, melt 1 Tbsp. butter. Crush Ritz crackers into the skillet and cook until golden brown. Transfer to a small bowl.
  3. Wipe out the skillet and melt the remaining 4 Tbsp. butter. Add onion and 1/2 tsp. salt, and cook until tender.
  4. Add garlic and cook until fragrant. Sprinkle flour and stir until a bubbling paste forms.
  5. Gradually whisk in milk and remaining 1/2 cup of water and bring to a simmer. Simmer until thickened.
  6. Stir in chickpeas and baking soda, heating through. Fold in broccoli.
  7. Reduce heat to low, fold in cheddar until melted. Adjust seasoning as needed.
  8. Top with buttery crackers and serve hot.

Notes

For a lighter version, use low-fat cheese or a dairy-free alternative. Leftovers can be refrigerated and reheated with a splash of milk.
