A comforting one-pot meal filled with savory ground beef, tender potatoes, and a rich, creamy blend of melted cheeses.

  • 1 lb ground beef (or stew beef, if preferred)
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil (or vegetable oil)
  • 1 cup beef broth (or water with a beef bouillon cube)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas or mixed vegetables for extra nutrition

Instructions

  1. Heat the olive oil over medium-high heat in a large skillet or Dutch oven. Add the ground beef and cook for 5-7 minutes until browned. Drain excess fat.
  2. Add diced onion and minced garlic to the beef, cooking for 2-3 minutes until softened and fragrant.
  3. Add diced potatoes, stir to combine, and cook for about 5 minutes.
  4. Pour in the beef broth and heavy cream, stir, and bring to a gentle simmer. Cover and cook for 20-25 minutes until potatoes are tender.
  5. Stir in shredded cheddar and Parmesan cheese until melted and creamy. Add peas or mixed vegetables if desired.
  6. Simmer for an additional 5 minutes to thicken the sauce, then taste and adjust seasoning.
  7. Serve warm, making sure to include both beef and potatoes in each serving.

Notes

This dish can be made in advance and stored in the refrigerator for up to 3 days. To freeze, portion out servings and freeze for up to 2 months.
