A delightful combination of sweet potatoes, tart cranberries, and crisp apples, perfect for cozy gatherings and special occasions.

Ingredients

  • 2 medium sweet potatoes
  • 1 small apple, peeled and finely diced
  • ⅓ cup dried cranberries
  • 2 tbsp butter (or coconut oil)
  • 1 tbsp maple syrup or brown sugar (optional)
  • ¼ tsp cinnamon
  • ⅛ tsp nutmeg
  • Salt to taste
  • Optional toppings: chopped pecans, crumbled feta, extra cranberries

Instructions

  1. Preheat oven to 400°F (200°C) and prick sweet potatoes with a fork. Bake for 45-50 minutes until tender.
  2. Let sweet potatoes cool, then slice in half and scoop out most of the flesh into a bowl.
  3. Add butter or coconut oil, maple syrup, cinnamon, and nutmeg to the mashed sweet potato and mix until smooth.
  4. Fold in diced apples and dried cranberries, then refill potato skins with the mixture.
  5. Bake filled potatoes for an additional 10-15 minutes until tops are golden.
  6. Garnish with your choice of toppings before serving.

Notes

For a dairy-free option, substitute butter with coconut oil. You can also prepare these ahead of time and bake just before serving.
