A quick and comforting dish featuring juicy chicken, tender gnocchi, and a luscious garlic cream sauce.

Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 (16 oz) package potato gnocchi (fresh or shelf-stable)
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: 1 teaspoon red pepper flakes

Instructions

  1. Pat the chicken dry and season both sides with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes on each side until golden brown and cooked through.
  3. Remove chicken from skillet and let it rest.
  4. In a pot, bring salted water to boil, add gnocchi, and cook according to package instructions (2-3 minutes), then drain.
  5. In the same skillet, sauté minced garlic for 1-2 minutes, then add chicken broth and simmer for 2-3 minutes.
  6. Stir in heavy cream and bring to a simmer, cooking for 3-4 minutes until sauce thickens.
  7. Add Parmesan cheese and butter, stirring until combined. Season with salt and pepper, and add red pepper flakes if desired.
  8. Slice cooked chicken, return to skillet, add gnocchi, and stir to combine. Cook for an additional 2-3 minutes.
  9. Remove from heat, garnish with parsley, and serve immediately.

Notes

You can substitute heavy cream with low-fat alternatives or add vegetables for a healthier option.
