Transform your leftover mashed potatoes into crispy, cheesy puffs that are perfect for any occasion!

Ingredients

  • 2 cups leftover mashed potatoes (preferably chilled)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons all-purpose flour
  • 1 large egg, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 23 tablespoons fresh parsley, chopped (optional, for garnish)
  • Oil for frying (vegetable, canola, or sunflower oil works well)

Instructions

  1. Prepare the mashed potatoes ensuring they are well chilled before starting.
  2. Mix in the shredded cheese, all-purpose flour, garlic powder, onion powder, and salt and pepper until well combined.
  3. Form the mixture into balls approximately 1 to 1½ inches in diameter.
  4. Heat oil in a large frying pan over medium-high heat.
  5. Fry the cheese puffs for about 3-4 minutes on each side until golden brown.
  6. Remove from oil and let them drain on paper towels.
  7. Allow to cool slightly and serve warm, garnished with parsley and your favorite dipping sauce.

Notes

For a lighter option, consider baking at 400°F (200°C) instead of frying.
