A delightful fusion of seasoned ground beef, cilantro lime rice, and ooey-gooey cheese wrapped in soft tortillas.

Ingredients

  • 1 lb. ground beef
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups cooked white rice
  • 1 Tbsp. lime juice
  • 2 Tbsp. finely chopped cilantro
  • 8 large flour tortillas
  • 1 1/2 cups shredded Cheddar
  • 1 cup Nacho Cheese Sauce
  • 1/2 cup sour cream

Instructions

  1. Cook the beef: Heat a skillet over medium-high heat, add ground beef, chili powder, cumin, and smoked paprika. Season with salt and pepper. Cook until no longer pink, about 6 minutes. Drain fat.
  2. Make cilantro lime rice: Combine cooked rice with lime juice and cilantro in a bowl. Toss to mix.
  3. Make quesadillas: Heat a pan, place a tortilla, sprinkle with Cheddar, top with another tortilla, cook until golden, about 2 minutes per side. Repeat for 4 quesadillas.
  4. Build Quesaritos: Lay a quesadilla flat, layer with rice, beef, nacho cheese, and sour cream. Roll tightly into a burrito shape. Repeat with remaining ingredients.
  5. Reheat the pan, add two Quesaritos, cook until golden and crispy, about 3-5 minutes per side. Serve immediately.

Notes

For a healthier version, substitute turkey for beef and use brown rice. Leftovers can be frozen and reheated.
