Indulge in the rich layers of chocolate, cream cheese, and a buttery crumb crust with this decadent Triple Chocolate Cheesecake.

Ingredients

  • 1 ½ cups chocolate cookie crumbs (such as Oreos)
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup semi-sweet chocolate chips, melted
  • 1 cup milk chocolate chips, melted
  • ½ cup cocoa powder
  • 1 cup dark chocolate ganache (made from 1 cup heavy cream and 8 oz dark chocolate)
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand and is well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then let it cool.
  4. In a large bowl, beat the softened cream cheese until smooth and creamy.
  5. Gradually add the sugar and vanilla extract; mix until fully combined.
  6. Add the eggs one at a time, mixing gently after each addition.
  7. Stir in the melted semi-sweet and milk chocolate chips, followed by the cocoa powder until everything is fully incorporated.
  8. Pour the cheesecake filling over the cooled crust.
  9. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.
  10. Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour before transferring it to the fridge.
  11. Once cooled, refrigerate the cheesecake for at least 4 hours or, better yet, overnight.
  12. Before serving, prepare the dark chocolate ganache by heating the cream and pouring it over the chopped dark chocolate. Stir until smooth and glossy.
  13. Pour the ganache over the chilled cheesecake and garnish with chocolate shavings.

Notes

For gluten-free, use gluten-free chocolate cookies; for a lighter version, substitute cream cheese with Greek yogurt.
