Preparation

  • Begin by chopping the carrots, celery, and onions into bite-sized pieces. Slice the chicken breasts or thighs thinly.

Cooking

  • Heat the olive oil or butter in a large pot over medium heat. Add the diced onions, carrots, and celery. Cook for about 5 minutes until softened.
  • Stir in the minced garlic and cook for another minute. Pour in the chicken broth and bring to a gentle boil.
  • Add the sliced chicken pieces to the boiling broth. Season with salt and pepper, and let simmer for about 8 minutes until cooked through.
  • Once the chicken is tender, add egg noodles according to package instructions (6 to 8 minutes). Stir occasionally.
  • When noodles are perfectly tender, turn off heat and stir in the freshly chopped parsley. Adjust seasoning before serving hot.

Notes

Adding a squeeze of lemon juice before serving can brighten up the flavors. Consider mixing in different vegetables like peas or corn. If looking for a kick, add red pepper flakes.
