Preparation

  • Add the chicken, thinly sliced onions, bell peppers, about two-thirds of the salsa, and salt into a 6-quart slow cooker. Stir gently to ensure everything is well combined.
  • Cover the slow cooker with a lid and set it to cook on high for 4 hours or on low for 6 hours, monitoring until the chicken is cooked and vegetables are tender.

Post-Cooking

  • After cooking, uncover the slow cooker and transfer the chicken pieces to a cutting board. Shred the chicken into bite-sized pieces using two forks.
  • Check the liquid in the slow cooker. Drain excess liquid if desired for a drier texture, or leave it in for a saucier dish.
  • Return the shredded chicken back into the slow cooker. Add the remaining salsa along with the fresh lime juice. Stir everything well to combine and adjust seasoning as needed.
