Filling

  • 12 oz apricot jam (use homemade or store-bought; substitute apricot for another flavor) Juicy filling that embodies the sweetness of Kolaczki.

Instructions

Prep the Kolaczki Dough

  • In a large mixing bowl, blend butter and cream cheese until smooth and creamy, about 2-3 minutes.
  • Add vanilla extract and salt to the mixture, beating until fully incorporated.
  • Gradually add the flour to the mixture and mix on low speed until just combined.
  • Wrap the dough in plastic wrap and refrigerate for at least 2 hours or overnight.

Assemble the Kolaczki

  • Once chilled, preheat your oven to 350°F (175°C). Roll out a portion of the dough to about ¼ inch thick on a floured surface.
  • Cut out circles from the dough using a round cutter.
  • Place a teaspoon of apricot jam in the center of each circle.
  • Fold the edges of each circle towards the center, pinching them together.
  • Arrange the Kolaczki on a baking sheet lined with parchment paper and bake for about 20-25 minutes or until lightly golden.
  • Allow cookies to cool slightly, then dust them with powdered sugar.

Notes

Make sure your butter and cream cheese are at room temperature for a smoother dough. Experiment with different jam flavors to customize your cookies.
