Instructions

Marinade Game Strong

  • In a mixing bowl, whisk together the honey, olive oil, soy sauce, fresh lemon juice, minced garlic, grated ginger, paprika, black pepper, and red pepper flakes (if you’re feeling bold).
  • Pat your cod fillets dry with paper towels and season them lightly with salt.
  • Place the fillets in a shallow dish, pour your marinade over them, ensuring each piece is thoroughly coated, and allow to marinate for 30 minutes.

Rice Prep (The Supporting Actor)

  • Rinse the jasmine rice under cold water until the water runs clear.
  • Combine it in a saucepan with the chicken broth and a pinch of salt.
  • Bring to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 18 minutes.
  • Once cooked, remove from heat and let it stand for 5 minutes; fluff it with a fork and mix in the creamy butter.

The Main Event

  • Preheat your oven to 400°F (200°C).
  • Heat an oven-safe skillet over medium-high heat, add 2 tablespoons of butter, and watch it foam and turn golden.
  • Carefully remove the cod fillets from the marinade (don’t throw the marinade away!) and place them in the hot skillet, searing for 2-3 minutes on each side.
  • Add lemon slices to the pan, and pour the reserved marinade around (not on top of) the fish.

Oven Magic

  • Transfer the sizzling skillet to your preheated oven and bake for 10-12 minutes, maintaining an eye until the fish flakes easily when tested with a fork.

Plate Like a Pro

  • Spoon a generous portion of jasmine rice into your plates.
  • Nestle the perfectly baked cod on top, drizzle with the pan sauce, and sprinkle with fresh parsley.

Notes

Serve alongside steamed vegetables or a crisp salad, and enjoy with a refreshing beverage. Always pat cod fillets dry before seasoning to achieve a good sear. Don't marinate too long to avoid a mushy texture.
