  • 1 cup cooked chicken, shredded or diced Tender and juicy.
  • 2 large eggs, beaten Rich and creamy.
  • 1 cup mixed veggies A colorful medley of carrots, peas, and bell peppers.
  • 3 tablespoons vegetable oil For sautéing.
  • 3 tablespoons Bang Bang sauce A creamy and spicy combination of mayonnaise, sweet chili sauce, and sriracha.
  • to taste salt and pepper To enhance the flavors.
  • for garnish green onions Providing a fresh, oniony crunch.

  • Begin by heating the vegetable oil in a large pan over medium heat until shimmering.
  • Add the mixed veggies to the pan and sauté them until softened, about 3–4 minutes.
  • Push the veggies to one side of the pan and pour in the beaten eggs. Scramble the eggs until fully cooked and lightly golden, mixing with the veggies once done.
  • Add the cooked rice and shredded chicken to the pan, combining all ingredients together vigorously.
  • Pour in the Bang Bang sauce, stirring well to coat all the ingredients thoroughly.
  • Season with salt and pepper to taste.
  • Continue cooking until everything is heated through. Garnish with chopped green onions before serving.

Notes

For a better texture, use chilled, day-old rice instead of freshly cooked rice. Feel free to substitute proteins and experiment with veggies. Adjust sriracha in the sauce based on your heat tolerance.
