Ingredients

For the Brownie Base

  • ½ cup ½ cup (1 stick) unsalted butter, melted
  • 1 cup 1 cup granulated sugar
  • 2 large 2 large eggs
  • 1 tsp 1 tsp vanilla extract
  • cup ⅓ cup unsweetened cocoa powder
  • ½ cup ½ cup all-purpose flour
  • ¼ tsp ¼ tsp salt
  • ½ cup ½ cup chocolate chips (optional for extra fudginess) Optional

For the Cheesecake Layer

  • 8 oz 8 oz cream cheese, softened
  • ¼ cup ¼ cup granulated sugar
  • 1 egg 1 egg
  • ½ tsp ½ tsp vanilla extract

For the Blackberry Swirl

  • ½ cup ½ cup fresh or frozen blackberries
  • 1–2 tbsp 1–2 tbsp sugar (depending on sweetness of berries)
  • 1 tsp 1 tsp lemon juice
  • 1 tsp 1 tsp cornstarch (if berries are very juicy) Optional

Instructions

Preparation

  • In a small saucepan, combine blackberries, sugar, and lemon juice. Heat over medium heat, mashing the berries with a fork until thick and jam-like, around 5–7 minutes. If berries produce a lot of juice, stir in cornstarch to thicken. Let cool slightly.
  • Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper.

Brownie Base

  • In a medium bowl, whisk together melted butter and sugar until well combined. Add eggs and vanilla extract, mixing until smooth.
  • Sift in cocoa powder, flour, and salt. Gently stir until just combined. If adding chocolate chips, fold them in now.
  • Spread the brownie batter into the prepared pan.

Cheesecake Layer

  • In a separate bowl, beat softened cream cheese until creamy. Add sugar, egg, and vanilla, mixing until smooth.
  • Spread the cheesecake layer over the brownie batter.

Blackberry Swirl

  • Dollop spoonfuls of blackberry mixture over the cream cheese layer. Swirl gently with a knife to create marbling.

Baking

  • Bake in the oven for 35-40 minutes. Let cool completely in the pan before slicing.

Notes

For serving, consider a scoop of ice cream or drizzling with white chocolate. Store leftovers in an airtight container in the refrigerator for up to a week.
