Instructions

Preparation

  • Line an 8x8 inch pan with parchment paper, leaving some overhang.
  • Combine crushed digestive biscuits and melted butter in a mixing bowl, press into the base of the prepared pan.

Pistachio layer

  • Blend ground pistachios, powdered sugar, and heavy cream in a food processor until smooth.
  • Spread the pistachio mixture over the crust and chill in refrigerator.

Cream cheese layer

  • Beat cream cheese, powdered sugar, and vanilla extract until fluffy.
  • Spread the cream cheese mixture over the chilled pistachio layer.

Blackberry topping

  • Cook blackberries, granulated sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened.
  • Cool slightly and then pour over the cream cheese layer.
  • Sprinkle with chopped pistachios.

Chilling and serving

  • Chill for at least 4 hours or overnight.
  • Lift bars using parchment paper, cut into squares, and garnish with extra blackberries.

Notes

For best results, use fresh blackberries and ensure cream cheese is softened. Line the pan with parchment for easy removal. Chill adequately to allow layers to set.
