Instructions

Preparation

  • In a small saucepan over medium heat, combine the blueberries and sugar. Cook for 5-7 minutes, stirring occasionally.
  • Gently mash the berries with a spoon until they break down into a thick, jammy consistency. Remove from heat and let cool slightly.

Assembly

  • Spread cream cheese or brie on one side of each slice of bread.
  • On two of the slices, layer the shredded mozzarella cheese over the cream cheese and spoon the blueberry mixture evenly on top.
  • Place the remaining slices of bread on top, cream cheese side down, to form two sandwiches.

Grilling

  • Heat a large skillet or griddle over medium-low heat.
  • Generously butter the outside of each sandwich.
  • Place the sandwiches in the pan and cook for 3-4 minutes per side, pressing down gently with a spatula.
  • Cook until the bread is golden brown and crispy, and the cheese is fully melted.

Serving

  • Remove from heat and let rest for 1-2 minutes before slicing the sandwiches diagonally.
