Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • Season the chicken pieces with salt and pepper.

Cooking the Chicken

  • In a large skillet over medium-high heat, cook the chicken pieces for 6-8 minutes until just done.

Make the Sauce

  • In a large bowl, mix the softened cream cheese, ranch dressing mix, buffalo wing sauce, and melted butter until smooth.

Assembly

  • Add the cooked chicken and rice or pasta into the buffalo mixture along with half of the cheddar and mozzarella cheeses, and any optional ingredients.

Top and Bake

  • Sprinkle the remaining cheeses on top, mix the panko with melted butter and add it as a topping.
  • Bake in the preheated oven for 25-30 minutes until golden and bubbly.

Garnish

  • Sprinkle chopped green onions and celery on top before serving.

Notes

For a healthier twist, use Greek yogurt in place of cream cheese. You can also substitute chicken with chickpeas or tofu for a vegetarian option.
