Instructions

Preparation

  • Bring a large pot of salted water to a rolling boil.
  • Add pasta and cook according to package instructions until al dente (approximately 8-12 minutes).
  • Reserve a cup of pasta water, drain the pasta, and set aside.

Cook the Vegetables

  • In a large skillet, heat olive oil over medium heat.
  • Add sliced leeks and mushrooms, stirring occasionally, and cook for about 5-7 minutes until the leeks are soft and mushrooms are golden brown.
  • Incorporate minced garlic and cook for another minute.

Make the Sauce

  • Pour in the dry white cooking broth or vegetable stock and simmer for a couple of minutes.
  • Add heavy cream and stir gently until combined.
  • Gradually stir in shredded Gruyere cheese until melted and creamy.
  • If too thick, add reserved pasta water to achieve desired consistency.

Combine and Serve

  • Toss the cooked pasta into the skillet with the sauce, ensuring every strand is well-coated.
  • Season with black pepper and salt to taste.
  • Remove from heat and garnish with chopped parsley if desired. Serve warm.

Notes

For a bit of spice, add a pinch of red pepper flakes. Serve with freshly grated Parmesan cheese or truffle oil for added flavor. This dish can be customized with different proteins and vegetables.
