Ingredients

For the caramelized onion filling

  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp unsalted butter
  • 4 medium yellow onions, thinly sliced
  • to taste Kosher salt
  • to taste Freshly ground black pepper
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp fresh thyme leaves, plus more for serving

For the pastry

  • All-purpose flour for surface For dusting the work surface.
  • 2 sheets frozen puff pastry, thawed in refrigerator Thaw overnight for best results.
  • 1 large egg, beaten to blend For brushing on pastries.
  • 4 oz goat cheese, crumbled
  • 2 tsp honey For drizzling on top.

Instructions

Preparation

  • In a large skillet over medium heat, add the olive oil and butter. Watch as they bubble and blend together.
  • Toss in the thinly sliced onions, seasoning generously with salt and freshly ground black pepper. Cook, stirring occasionally for about 35 minutes until caramelized.
  • Once the onions have achieved a deep caramel hue, stir in balsamic vinegar and fresh thyme. Let cool.
  • Preheat the oven to 375°F and prepare baking sheets with parchment paper. Cut each sheet of puff pastry into 9 squares.
  • Transfer the pastry squares to the baking sheets and top each with approximately 1 tablespoon of the caramelized onion mixture.
  • Brush the exposed edges with the beaten egg and crumble goat cheese over each square.

Baking

  • Bake the tarts, rotating sheets halfway through, for about 25 to 28 minutes until puffed and golden brown.
  • Drizzle honey on each tart and top with extra thyme and a dash of freshly ground pepper before serving.

Serving

  • Serve immediately while warm or let cool to room temperature.

Notes

For healthier alternatives, consider swapping goat cheese with cashew cheese or using gluten-free puff pastry. These bites can be paired with a variety of sides, such as creamy vanilla ice cream or crisp white wine.
