  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, beat together the eggs and sugar until smooth and slightly pale.
  • Gradually add the oil and vanilla extract, mixing until well combined.
  • Stir in the dry ingredients until just combined, making sure not to overmix.
  • Fold in the grated carrots, walnuts (if using), and raisins (if using).

For the Cream Cheese Frosting

  • In a medium bowl, beat together cream cheese and unsalted butter until smooth and fluffy.
  • Add vanilla extract and powdered sugar, one cup at a time, beating until smooth and creamy.
  • Spread the frosting evenly over the cooled bars.
