Instructions

Preparation

  • Mix the flour, sugar, salt, and instant yeast in a large mixing bowl.
  • Slowly add the warm milk to the dry ingredients, stirring until a sticky dough forms.
  • Gently fold in the shredded cheddar and chopped scallions.
  • Cover the bowl with a damp cloth and let it rise for about one hour in a warm spot.
  • Dust your work surface with cornmeal, turn out the dough, and roll it out to cut rounds.
  • Allow the rounds to rise for another 20 minutes.

Cooking

  • Preheat a dry cast-iron skillet or griddle on low to medium heat.
  • Carefully place the muffins on the skillet and cook for about 5-7 minutes on each side.
