Ingredients

For the Brownie Layer

  • ½ cup unsalted butter, melted 1 stick
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup semi-sweet chocolate chips optional

For the Cheesecake Swirl

  • 8 oz cream cheese, softened
  • cup granulated sugar
  • ½ tsp vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare an 8×8 or 9×9-inch pan by lining it with parchment paper.
  • In a large bowl, whisk melted butter with granulated sugar and brown sugar until smooth.
  • Add eggs and vanilla, mixing well until combined.
  • Sift in cocoa powder, flour, salt, and baking powder; stir until just combined.
  • Fold in chocolate chips if using.
  • In another bowl, beat cream cheese with sugar, egg, and vanilla until smooth.
  • Pour about ¾ of the brownie batter into the prepared pan.
  • Spoon the cheesecake mixture on top.
  • Drop the remaining brownie batter over the cheesecake layer in dollops.
  • With a knife or skewer, gently swirl the two layers together.

Baking

  • Bake for 35–40 minutes, checking that the center is just set.
  • Cool completely before slicing for clean cuts.
  • Chill in the fridge for a firmer texture.

Notes

Serve with vanilla ice cream for a delightful contrast in temperature and texture.
