Ingredients

Zucchini Steaks

  • 2 large large zucchinis, cut into ½–¾-inch thick lengthwise slices

Cheese Toppings

Instructions

Preparation

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  • Slice the zucchinis lengthwise into thick, even steaks and lay them flat on the baking sheet.
  • Brush olive oil generously on the zucchini slices, then sprinkle minced garlic, Italian seasoning, salt, and pepper evenly over each steak.

Baking

  • Bake for 12–15 minutes or until the zucchini is just tender.
  • Remove the baking sheet from the oven and sprinkle mozzarella and parmesan cheese over the top of each zucchini steak.
  • Broil for 2–4 minutes, until the cheese is melted and golden brown.

Serving

  • Garnish with freshly chopped parsley and serve warm.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individually wrapped cooked steaks and reheat in the oven.
