Instructions

Preparation

  • In a large mixing bowl, combine the mascarpone cheese, heavy cream, cherry juice, granulated sugar, cherry preserves, amaretto liqueur, and vanilla extract. Whisk until smooth and fluffy.
  • Quickly dip each ladyfinger in cherry juice, ensuring they’re moist but not soggy. Layer the soaked ladyfingers at the bottom of a serving dish.
  • Spread a generous layer of the mascarpone mixture over the ladyfingers, then sprinkle half of the chopped cherries on top. Repeat the process with another layer of soaked ladyfingers, mascarpone mixture, and remaining chopped cherries, ending with mascarpone cream.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
  • Dust the top with cocoa powder and garnish with shaved dark chocolate before serving.

Notes

Ensure mascarpone and heavy cream are at room temperature for easier blending. Consider using additional cherry preserves for a more pronounced cherry flavor. This dessert is best made ahead of time, as it tastes better after a night in the fridge. Variations include substituting cherries with raspberries or strawberries.
