  • 1 lb boneless, skinless chicken breasts About 3-4 breasts, juicy and tender.
  • 2 cups fresh broccoli florets Bright green and crisp.
  • 1 cup shredded sharp cheddar cheese Creamy and rich.
  • 10.5 oz can cream of chicken soup Low-sodium if desired.
  • 1 tsp garlic powder Enhances flavor.
  • 1 cup panko breadcrumbs Adds a delightful crunch.
  • 2 tbsp olive oil For sautéing and breadcrumbs.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, add a drizzle of olive oil and sauté the diced chicken until it’s golden brown and fully cooked, about 5-7 minutes.
  • Once the chicken is cooked, add the fresh broccoli florets to the skillet and cook for an additional 3-4 minutes until the broccoli brightens and keeps its crunch.
  • In a separate bowl, combine the cream of chicken soup, garlic powder, and half of the shredded cheddar cheese. Stir until smooth.
  • Pour the creamy mixture over the cooked chicken and broccoli, stirring gently to coat.
  • Transfer the mixture into a greased baking dish, spreading it out evenly.
  • In a small bowl, mix the panko breadcrumbs with the remaining cheddar cheese and drizzle with olive oil. Sprinkle this over the casserole.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.

Notes

For added flavor, consider using herbs like thyme or rosemary. You can also use rotisserie chicken for quicker preparation. Pair with a green salad or garlic bread for a complete meal.
