Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish.
  • In the prepared baking dish, mix together the onions, red bell peppers, uncooked rice, fajita seasoning, and optional cayenne pepper.

Wet Mixture

  • In a separate bowl, whisk together the chicken broth, green chilies, tomato paste, and olive oil until well combined.
  • Pour this mixture over the rice and vegetable mixture in the baking dish and stir gently to combine.

Combine and Bake

  • Fold in the shredded chicken, black beans, and corn to enhance the dish.
  • Cover the dish tightly with foil and bake for 65 to 70 minutes, or until the rice absorbs most of the liquid.
