Ingredients

Burger Patties

  • 1 lb ground chicken Lean protein base
  • 1 small zucchini (grated and squeezed dry) Brings moisture
  • 1/2 cup corn kernels Fresh, frozen, or canned
  • 1/4 cup breadcrumbs or almond flour For gluten-free option use almond flour
  • 1 large egg Bind the mixture
  • 2 cloves garlic (minced) Enhances flavor
  • 1/4 cup chopped green onions or parsley For freshness
  • 1 tsp onion powder For seasoning
  • 1/2 tsp paprika
  • Salt & black pepper To taste
  • 1 tbsp olive oil For pan-frying

Instructions

Preparation

  • Begin by grating the zucchini and using a clean towel to squeeze out any excess moisture.
  • In a mixing bowl, combine the ground chicken, drained zucchini, corn, egg, breadcrumbs, garlic, herbs, and spices. Use your hands or a spatula to mix until everything is evenly combined.
  • Shape the mixture into 4 to 5 equal burger patties, compressing tightly.

Cooking

  • Pan-Fry: Heat olive oil in a skillet over medium heat. Cook burgers for 5–6 minutes per side or until they’re fully cooked through and have developed a golden crust.
  • Grill: Preheat your grill to medium-high. Lightly oil the grates and cook burgers for about 4–5 minutes each side.

Serving

  • Serve the burgers in toasted burger buns or crispy lettuce wraps. Top with avocado, fresh tomatoes, or your favorite sauce.

Notes

Avoid overbaking to prevent dry patties; keep an eye on the cooking time. Use a spatula to gently lift the patties to avoid breaking them.
