  • Begin by breaking apart any large chunks of your leftover rice.
  • Heat a large wok or non-stick pan over medium heat. Once hot, add in the chili oil, allowing it to infuse the pan.
  • Sprinkle the salt into the oil and mix well to incorporate the flavors.
  • Add the minced garlic to the pan and stir-fry over medium heat until golden brown.
  • Introduce the leftover cooked and cooled rice to the mixture, breaking apart any remaining chunks to ensure even cooking.
  • Mix the rice thoroughly with the oil and garlic, letting it fry for about 3-4 minutes over medium heat.
  • Once satisfied with the flavor and texture, turn off the heat and consider stuffing some of the fried rice into a bowl, flipping it over to create a dome shape on your plate.
  • Top with fresh chopped cilantro for a vibrant finish.

Notes

For added flavor, consider tossing in vegetables like peas or bell peppers, or proteins like tofu, chicken, or shrimp for a heartier meal. A squeeze of lime or lemon juice adds a refreshing contrast.
