  • 8 cups Rice Chex cereal These crispy little squares are the base of our mix.
  • 1 cup Mini pretzel twists Salty and crunchy, they add a delightful twist.
  • 3/4 cup Roasted almonds Adds a rich creaminess.
  • 3/4 cup Dried cranberries Juicy and tangy for flavor.
  • 1/2 cup Red & green M&M’s Adds sweetness and a festive touch.

Coating Ingredients

  • 1 cup White chocolate chips Provides a luscious coating.
  • 1/4 cup Coconut oil Adds a hint of coconut flavor.
  • 1 tsp Pure vanilla extract Aromatic note for flavor.
  • 1/2 tsp Ground cinnamon (optional) For an extra layer of flavor.

Instructions

Preparation

  • Line a large baking sheet with parchment paper or a silicone mat.
  • In a large mixing bowl, combine the Rice Chex, mini pretzel twists, roasted almonds, and dried cranberries.
  • In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 20-second bursts, stirring in between.
  • Whisk in the vanilla extract and optional cinnamon into the melted chocolate.
  • Pour the melted mixture over the cereal mix and toss until evenly coated.
  • Spread the mixture onto the prepared baking sheet.
  • Sprinkle M&Ms on top and press them lightly into the mix.
  • Chill in the refrigerator for 20-30 minutes.
  • Break the Chex Mix into clusters and serve.

Notes

Store in an airtight container at room temperature for up to two weeks. Can be frozen for up to three months.
