Ingredients

For the Cupcakes

Instructions

Preparation

  • Preheat your oven to 180°C (or 160°C for fan ovens) and prepare 12 cupcake cases by placing them in a muffin tray.
  • In a mixing bowl, beat together the softened unsalted butter and light brown soft sugar until the mixture is light and fluffy.
  • Incorporate the self-raising flour, cocoa powder, eggs, and 1 teaspoon of vanilla extract into the bowl. Beat until thick and well combined.
  • Divide the batter evenly among the 12 cupcake cases.

Baking

  • Place the tray in the oven and bake for 20-22 minutes or until a skewer inserted into the center comes out clean.
  • Once baked, remove the cupcakes from the oven and allow them to cool completely on a wire rack before icing.

Making the Buttercream

  • Beat the room temperature unsalted butter for a few minutes until creamy.
  • Add in the icing sugar and 1 teaspoon of vanilla extract, beating until it’s smooth and fluffy.
  • Combine the green food coloring into the buttercream until you achieve the desired vibrant shade.

Decoration

  • Using a star nozzle, pipe the green buttercream atop each cupcake.
  • Press your festive sprinkles onto the cupcakes and gently top each one with a chocolate star.
  • Lightly dust with icing sugar before serving to mimic fresh snow.
