Instructions

Preparation

  • Roughly chop the dried pineapple chunks into bite-sized pieces.
  • Measure out the raw unsalted cashews and unsweetened shredded coconut.
  • Have honey or maple syrup and melted coconut oil ready for mixing.

Mixing

  • In a food processor, place the raw cashews and pulse until they reach a coarse crumb texture.
  • In a large mixing bowl, combine the processed cashews, chopped dried pineapple, shredded coconut, honey or maple syrup, and melted coconut oil. Mix thoroughly until sticky.

Forming Bites

  • With clean hands, scoop out small portions of the mixture and roll them into bite-sized balls.
  • If the mixture is too sticky, add a drizzle of extra coconut oil or honey to help bind.

Chilling

  • Arrange the finished bites on a parchment-lined tray and refrigerate for at least 30 minutes.
