Preparation

  • Using your hands, form the mixture into small meatballs about the size of an inch in diameter. Place them on a plate and set aside.

Cooking

  • In a large pot, heat a splash of olive oil over medium heat. Sauté the diced onions, carrots, and celery together for about 5-7 minutes, or until the vegetables are softened and fragrant.
