Instructions

Preparation

  • In a medium-sized bowl, sprinkle the unflavored gelatin over 1 cup of cold cranberry juice and let it bloom for 5 minutes.
  • In a saucepan, combine the bloomed gelatin mixture with 2 cups of heated cranberry juice. Stir over low heat until the gelatin is fully dissolved.
  • Gently mix in the fresh cranberries and drained pineapple chunks. Fold in the mini marshmallows.
  • Pour the mixture into a mold or dish and refrigerate for at least 4 hours to set completely.
  • Before serving, whip the cream until soft peaks form and top each portion with the whipped cream.
