  • 1 cup brown sugar, packed
  • 2 large eggs

  • Zest of 1 large orange orange zest

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups dried cranberries
  • 1 cup chopped walnuts (optional) Optional for added texture

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, orange zest, and orange juice until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Gently fold in the dried cranberries and walnuts (if using) until evenly distributed.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

For added flavor, substitute half of the all-purpose flour with whole wheat flour. For more pronounced orange flavor, add more zest or juice. Store in an airtight container for up to a week or freeze for longer storage.
