Instructions

Preparation

  • Heat olive oil in a large, heavy-bottomed pot over medium heat. Add the finely chopped onion (if using) and minced garlic, sauté until fragrant and softened, about 3-4 minutes.
  • Stir in the rinsed basmati rice and toast for 2-3 minutes.
  • Add sweet paprika and cumin, stirring for another 30 seconds.
  • Pour in crushed tomatoes, chicken broth, and crumbled bouillon cube. Stir well to combine.
  • Bring the mixture to a boil, then reduce to low and simmer for 18-20 minutes.

Cooking the Steak

  • While the rice cooks, season the sirloin slices with Montreal steak seasoning. In a large skillet, melt butter over medium-high heat. Cook steak strips for 2-3 minutes per side until browned.

Finishing Touches

  • Once the rice is cooked, let it sit for 5 minutes off heat, then fluff gently with a fork.
  • Serve the flavorful rice in bowls, topped with juicy steak strips, white queso, and fresh cilantro.
