Ingredients

For the Salmon Bites

  • 1 lb fresh, skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • NA Vegetable oil (for frying)

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

Preparation

  • Cut the fresh salmon into 1-inch cubes and pat them dry gently with paper towels.
  • Create a breading station using three bowls: one for the flour, another for the beaten eggs, and the last for the panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and black pepper.
  • Coat each salmon cube in flour, shaking off any excess, then dip in the beaten eggs, and finally roll in the seasoned panko mixture. Set aside on a plate.

Cooking

  • Heat about 1 inch of vegetable oil in a skillet over medium heat until hot but not smoking.
  • Carefully fry the salmon bites in batches, ensuring not to overcrowd the pan. Cook each side for about 2-3 minutes or until golden brown and crispy. Remove and place on a paper towel-lined plate.

Making the Bang Bang Sauce

  • In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.

Serving

  • Drizzle the Bang Bang sauce over the crispy salmon bites and serve immediately.

Notes

For extra crunch, double-coat the salmon using the flour, egg, and panko steps again. Prepare the Bang Bang sauce ahead of time for enhanced flavors. Maintain even oil temperature to keep salmon light and crispy.
