Instructions

Preparation

  • Add the fresh spinach, kosher salt, and crushed red pepper flakes. Stir and cook until the spinach is wilted, around 2-3 minutes.
  • In a separate bowl, whisk together the large eggs and heavy cream until fully combined to make a light and fluffy base.
  • Pour the cooked spinach mixture into the egg and cream mixture, adding the shredded mozzarella cheese. Mix well to ensure everything is evenly distributed.
  • Grease a baking dish with cooking spray or oil. Pour the spinach and egg mixture into the dish, spreading it out evenly.

Cooking

  • Preheat your oven to 375°F (190°C). Bake the quiche for 25-30 minutes, or until set in the center and golden brown on top.
