Instructions

Preparation

  • Boil a pot of water and add a generous pinch of salt. Once it reaches a rolling boil, add the 8 oz of pasta and cook according to the package instructions until al dente.
  • Drain the pasta and set it aside while you prepare the sauce.

Cooking

  • In a large skillet, add 3 tablespoons of olive oil and heat over medium heat.
  • Add the 2 cloves of minced garlic and sauté for about a minute until fragrant.
  • Stir in the 1/2 cup of chopped sun-dried tomatoes and cook for another 2 minutes.
  • Add the 2 cups of fresh spinach into the skillet and stir until wilted, about 2-3 minutes.
  • Gently toss the drained pasta into the skillet, mixing until well combined.
  • Season generously with salt and pepper to taste.
  • Serve hot, topped with grated Parmesan cheese if desired.

Notes

Pair with a simple green salad or serve alongside garlic bread. For variation, consider adding zucchini or bell peppers, or use whole-grain pasta for a healthier twist.
