  • 2 cups cooked chicken, shredded Rotisserie chicken works great!
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Or a cheese blend
  • 1 bag (9.75 oz) Doritos, crushed Nacho cheese flavor for best results
  • 1 cup diced tomatoes Fresh or canned, drained
  • 1/2 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, garlic powder, onion powder, diced tomatoes, and half of the shredded cheese. Mix until well blended.
  • In a greased 9x13 inch baking dish, spread half of the crushed Doritos evenly across the bottom.
  • Pour the chicken mixture over the layer of Doritos, spreading it evenly.
  • Sprinkle the remaining crushed Doritos on top of the chicken mixture, followed by the rest of the shredded cheese.

Baking

  • Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden brown.

Serving

  • Allow the casserole to cool for a few minutes before garnishing with chopped green onions. Serve warm and enjoy!

Notes

Optional substitutions include using turkey instead of chicken, Greek yogurt instead of sour cream, and plant-based cheese for a dairy-free option. Can be prepared ahead of time and baked later.
