Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine halved cherry tomatoes and minced garlic. Drizzle with olive oil, season with salt and pepper, and toss well.
  • Place the block of feta cheese in the center of the tomatoes.

Baking

  • Bake in the preheated oven for 30-35 minutes until tomatoes burst and feta softens.

Cooking Pasta

  • While baking, bring a pot of salted water to boil and cook penne according to package instructions until al dente, reserving 1 cup of pasta water before draining.

Mixing

  • Once baking is done, mash the feta into the tomatoes until creamy and combine with the cooked pasta, adding reserved pasta water as needed.

Serving

  • Serve hot, garnished with fresh basil leaves.
