Instructions

Preparation

  • Beat the softened butter and cream cheese together in a mixing bowl.
  • Add granulated sugar, eggs, vanilla, and almond extract. Mix on medium speed for about 4-5 minutes until light and fluffy.
  • Scrape down the bowl to ensure all ingredients are well incorporated.
  • Gradually mix in the all-purpose flour, cornstarch, baking soda, and salt until a dough forms. Avoid overmixing to keep the cookies tender.

Chill & Prepare

  • Cover the dough with plastic wrap and refrigerate for at least 2 hours to maintain shape while baking.
  • Preheat your oven to 350°F (175°C) and roll the chilled dough into 1-inch balls.

Baking

  • Place dough balls on a parchment-lined baking sheet. Press each ball with a fork to make a crisscross pattern and sprinkle with sanding sugar.
  • Bake in the preheated oven for 9–11 minutes until edges are set but cookies remain pale and soft.
  • Allow cookies to rest on the baking sheet for about 5 minutes, then transfer to a cooling rack to cool completely.
