Instructions

Preparation and Cooking

  • Heat olive oil in a skillet over medium heat.
  • Place one tortilla in the skillet and layer half of the mozzarella cheese, chopped spinach, crumbled feta cheese, sliced roasted red peppers, and black olives. Top off with the remaining mozzarella.
  • Cover with the second tortilla and cook until the bottom tortilla is golden brown, about 2-3 minutes.
  • Carefully flip the quesadilla using a spatula, and cook the other side until it is golden and the cheese is thoroughly melted, about 2-3 more minutes.
  • Remove from skillet, slice into wedges, and serve warm.

Notes

For perfect quesadillas, flip with finesse. Experiment with fillings for variation. For a healthier option, bake assembled quesadillas at 400°F (200°C) for about 10 minutes.
