  • 3-4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 8 oz cream cheese

Seasonings and aromatics

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 piece Lime, juiced
  • Fresh cilantro, for garnish

Instructions

Preparation

  • Dice the chicken breasts into bite-sized pieces.
  • Heat oil in a large pot over medium heat. Add chopped onions and minced garlic, sautéing until translucent, about 3 minutes.
  • Add the diced chicken to the pot along with ground cumin and chili powder. Cook until the chicken is golden brown, about 5-7 minutes.
  • Stir in the drained beans and chicken broth, mixing everything well.
  • Lower the heat, add cream cheese, and stir until fully melted, about 3 minutes.
  • Stir in diced green chiles and lime juice, then allow to simmer on low heat for about 20 minutes.
  • Serve hot, garnished with fresh cilantro.

Notes

For richer flavor, brown the chicken before adding. Adjust spices as desired. Use a slow cooker by adding all ingredients except cream cheese and cook on low for 6-8 hours.
