Instructions

Preparation

  • Clean mushrooms with a damp cloth and slice them into ¼-inch thick pieces.
  • Soak slices in buttermilk for 10 minutes.

Coating

  • In a bowl, mix flour, cornstarch, garlic powder, paprika, salt, pepper, and cayenne (if using).

Frying

  • Heat 1½ to 2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).
  • Remove mushrooms from buttermilk and toss them in the flour mixture, ensuring they are well coated.
  • Fry in batches for 2–3 minutes per side until golden brown.
  • Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
  • Sprinkle with a pinch of salt while hot.
  • Serve immediately with ranch dressing.
