Instructions

Preparation

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until evenly combined.
  • To the dry mix, add the plain yogurt, cottage cheese, warm water, melted butter, and olive oil. Mix gently until a soft dough forms.
  • Turn the dough onto a floured surface and knead it for about 5 minutes until smooth and soft.
  • Shape the dough into a ball, cover with a damp cloth, and let it rest for 20 minutes.
  • After resting, divide the dough into 6 portions and shape into balls. Roll them out into 1/4 inch thick rounds.

Cooking

  • Heat a skillet over medium-high heat, drizzling a little olive oil.
  • Cook each flatbread for about 2 minutes on one side until bubbles form, then flip and cook for an additional 1-2 minutes until golden brown.
  • Brush each warm flatbread with melted butter mixed with minced garlic, then sprinkle with parsley and crumbled feta.
  • Serve warm, either alone or as a side to your favorite dishes.
