Preparation

  • In a large stockpot, heat olive oil over medium heat. Once shimmering, add thinly sliced garlic, sautéing for 2-3 minutes until golden, but not brown.
  • Stir in smoked paprika.
  • Add the stale bread, coating it in the garlic oil, and cook for an additional 3 minutes.
  • Pour 6 cups of chicken stock into the pot, breaking up the softening bread. Bring to a strong simmer.
  • Stir in a slow circular motion while gradually pouring in the whisked eggs to create delicate ribbons.
  • Taste and adjust seasoning with salt, black pepper, and more smoked paprika if desired.
  • Ladle the soup into bowls and enjoy the warmth.
