Ingredients

Soup Base

  • 2 cups chicken broth rich and savory, the base of your soup
  • 1 cup cooked chicken, shredded tender pieces that add protein and heartiness
  • 1 inch ginger, grated adds warmth and a spicy kick
  • 4 cloves garlic, minced aromatic and flavorful, a must-have for depth
  • 2 cups egg noodles chewy and comforting, they soak up the broth
  • 1 cup vegetables (carrots, peas, etc.) vibrant additions for color and nutrition
  • 2 tablespoons soy sauce for a touch of umami
  • salt and pepper to taste
  • green onions for garnish fresh and crispy, they add a pop of color

Instructions

Preparation

  • Heat a small amount of oil in a large pot over medium heat. Add the grated ginger and minced garlic to the pot, sautéing until fragrant and golden, about 1-2 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Stir in the cooked chicken and your choice of vegetables. Heat through for about 3-5 minutes.
  • Add the egg noodles, cooking until tender, which should take about 5-7 minutes.
  • Season with soy sauce, and add salt and pepper to taste. Serve hot, garnished with fresh green onions.

Notes

Use fresh ginger and garlic for vibrant flavors. Consider adding dark leafy greens or other vegetables for extra nutrition. Store leftovers in an airtight container; for freezing, keep noodles separate until reheating.
