Ingredients

Pizza Base

  • 1 piece pre-made pizza crust store-bought or homemade

Vegetables

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice off the top of the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast for about 30-35 minutes until soft and caramelized.
  • Allow the roasted garlic to cool slightly, then squeeze the cloves into a bowl.
  • In a skillet over medium heat, add the remaining tablespoon of olive oil. Sauté chopped spinach until wilted, about 2-3 minutes. Season with salt and pepper to taste.

Mixing

  • Mash the roasted garlic in a bowl until smooth. Add ricotta cheese, half of the mozzarella, oregano, and a pinch of salt and pepper. Mix until well combined.

Assembly and Baking

  • Spread the garlic-ricotta mixture evenly over the pizza crust as the base.
  • Top with sautéed spinach, remaining mozzarella, crumbled feta, and crushed red pepper flakes if desired.
  • Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheeses are bubbly.

Serving

  • Let the pizza cool for a couple of minutes. Garnish with fresh basil leaves before slicing and serving.

Notes

For best results, pre-bake the crust for a few minutes to prevent sogginess. You can also customize the cheese and add ingredients like sun-dried tomatoes for extra flavor.
