Instructions

Marination

  • Combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper in a bowl. Toss salmon cubes in marinade and refrigerate for at least 30 minutes.

Assembling Skewers

  • Thread marinated salmon onto skewers with space between each piece. Soak wooden skewers in water if used.

Grilling

  • Preheat grill to medium-high heat and lightly oil the grates.
  • Grill salmon skewers for about 3-4 minutes per side until they turn opaque and have a slightly charred exterior.

Preparing Sauce

  • In a bowl, mix Greek yogurt, dill, lemon juice, lemon zest, minced garlic, salt, and pepper until smooth.

Notes

For deeper flavor, marinate salmon for up to an hour. These skewers can also be cooked under a broiler or on a stovetop grill pan.
