Ingredients

  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper.

Roasting Sweet Potatoes

  • Spread the seasoned sweet potatoes on a baking sheet in a single layer.
  • Roast them in the oven for 40-45 minutes, turning halfway through, until golden brown and tender.

Cooking Beef

  • While the sweet potatoes roast, heat the remaining olive oil in a skillet over medium heat.
  • Add the diced onion and sauté until softened and translucent, about 5 minutes.
  • Add the ground beef and taco seasoning to the skillet with onions, cooking until browned and cooked through, about 6-8 minutes.

Assembly

  • Layer the roasted sweet potatoes in bowls, followed by the seasoned ground beef.
  • Top with fresh avocado slices and a scoop of cottage cheese.
  • Drizzle hot honey over each bowl.

Notes

For extra flavor, consider adding toppings like chopped fresh cilantro, jalapeños, or tortilla chips. Swap cottage cheese for Greek yogurt for a different texture. Vegetarian options include using black beans or lentils.
