  • 1 tablespoon olive oil rich and smooth
  • ½ cup honey golden and sweet
  • ¼ cup balsamic vinegar tangy and aromatic
  • 1 cup fresh or dried cranberries vibrant and tart
  • ½ cup crumbled feta cheese creamy and salty
  • 1 teaspoon dried thyme or rosemary fragrant herbal notes
  • for garnish Fresh parsley optional, bright green and fresh

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Season both sides of the chicken breasts generously with salt and black pepper.
  • In a mixing bowl, whisk together honey, balsamic vinegar, and dried thyme or rosemary until combined.
  • Place the seasoned chicken breasts into the prepared baking dish. Pour the honey-balsamic glaze over the chicken.
  • Scatter fresh or dried cranberries over the top.

Cooking

  • Cover the baking dish with foil and bake for 20 minutes.
  • After 20 minutes, remove the foil and bake for another 15-20 minutes until the chicken is fully cooked through.
  • Once cooked, sprinkle crumbled feta cheese over the chicken and return the dish to the oven for 5 minutes.
  • For a final touch, broil for 2-3 minutes to achieve a golden top.
  • Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.

Notes

Tip: Pound chicken to an even thickness for consistent cooking. Don't skip the resting time after baking.
